I found my first ring mold and made a Ring of Bronze. Neat stuff. Now for the inevitable questions Are there any rings or ammys that an enchanter can decompose? Does the metal you make the jewelery out of affect it in any way? Will monsters think I'm fashionable or just snicker at my bejeweled Dwarf? - Gra!

No. You have to find the molds. Not really, though it's fun to brag about you wearing a blue steel ring versus another player's bronze. Well, nymphs, kunoichis and other female enemies might think it's nice jewelry and that will give them an actual reason to attack you. A dragon will not care though...

Do rings/amulets have a base AC that will improve with higher crafting skill (similar to other armor pieces)? Afterall, there are some kinds of each that do have an AC (ring of protection, amulet of the golem, etc). When crafting these items, do I create a predefined kind of ring/amulet, or is it just that I get tweak points to spend, and make completely custom jewelry?

You just get tweak points, and make your own ring/amulet. It has no preset abilities.
If you want to add AC, use the Enchanter's Defense Transfer.
