Does anyone have any good ways for a melee character to fight physical immune monsters that block well? So far, I've usually been able to eventually wear them out with elemental strike, but, with very few hits, it seems ineffective against stronger monsters.

Are you wielding a single weapon (or weapon and shield) and using skill points in combat feats? First attack does normal damage, every attack afterwards doing something silly like 2 or 6 points of damage?
Or are you actually getting the messages "monsterX blocked your attack/magic?"
If it's the former, I'm looking into the root cause of the issue.
If the monster is legitimately blocking, try elemental shield as long as you can afford to take a beating for a while. It can be slow (less so with multiple AP in the ability, and much less so for monsters with a lot of attacks) and you'll have to keep renewing it, but eventually the mob will wear itself down so that a elemental strike will finish it off.

Accurate Strike with an elemental weapon will work. Use ice weapons if the monster is vulnerable to cold or you're a zulgor. Otherwise, if it's a ghost, try one of the fire axes sold by one of Jindar's NPCs, Aria's Soul, the electric artifact flail, or make your own using the enchanter's abilities.
If you don't have/want it, Element Strike's counter bypassing can be improved by raising your Int or Wis. Maybe dedicating an item or two to it would help.
EDIT: The more I think about it, the more I think I'll turn Element Strike into a melee attack instead, so that strength/dex can be used against counters instead of int/wis. Would make Element Strike builds easier to play.
